Our kitchen

Two families' recipes, one long counter

Marigold started as a Saturday bun stall at the Cathedral Quarter market. Nadia baked; her brother-in-law Joe made the chai in a pan big enough to bathe in. We sold out by eleven, every week, for a year.

Now we bake everything on site at 31 Friar Gate: sourdough on a two-day ferment, focaccia, and the buns. Lunch borrows from both sides of the family, so you'll find tadka dal next to a squash focaccia, and nobody minds.

“The cardamom buns are dangerous. I come in for one and leave with four and a chai. Staff remember your order by the second visit.”
